The checker separates high-confidence gluten terms from terms that depend on context, source, country, or certification.

Declared gluten terms

  • wheat, barley, rye, triticale
  • malt, malt extract, malt syrup, malt vinegar, barley malt
  • brewer's yeast, wheat starch, wheat flour, durum, semolina, spelt, farro, couscous, bulgur

Unknown terms

  • oats or oat flour, because cross-contact and certification matter
  • modified food starch, dextrin, starch, natural flavors, yeast extract
  • soy sauce or tamari, because recipes vary and wheat may be present

Why this is not enough on its own

Ingredient names can be jurisdiction-specific, OCR can misread text, and manufacturers can change formulations. For medical decisions, use authoritative guidance and professional advice. For packaged foods, the current product label and manufacturer information matter.
